Slow Cooker Sweet Fire Chicken

*This recipe is definitely not for people who don't like spicy food*
Just recently, I had this huge craving for Panda Express. Like HUGE! I went two months where I wanted Panda but we just never went until a few weeks ago. I almost always get their Sweet Fire Chicken when I go. It has all of my favorite things - chicken, bell peppers, and pineapple! So great! I found this recipe on Pinterest and I figured that it was worth a shot. It exceeded all my expectations - it was tasty, easy to make, and made our house smell amazing! Click here for the recipe.
Before I give you the break down of this recipe, I want to give you my input on this recipe. I would either use less pineapple or add one more bell pepper. Both Cole and I felt like there wasn't a good chicken, pineapple, bell pepper ratio. You can also serve this with a side of rice (white/brown/ham fried - whatever floats your boat) or on top of white rice. We personally liked it served over the rice opposed to having a side of rice. Either way, it's dang good!
Here's approximately what the meal will cost you:
  • 3-4 boneless, skinless chicken breasts (We used the last pound of our chicken tenderloin @ $3.23/lb) = $3.23
  • 1 red bell pepper = $1.28
  • 1 can pineapple chunks (Dole Pineapple Chunks @ $1.48) = $1.48
  • 2 teaspoons minced garlic (We got a jar of Pampa Minced Garlic over the summer and we still haven't used half of it. I can't find the exact price but it probably cost us about $3) = $0.12
  • 1-2 teaspoons crushed red pepper flakes (We got 5th Season Crushed Red Pepper a while back too. I remember it being pretty cheap but I'll estimate it being $2) = $0.37
  • 2/3 cup sugar (4 lbs Great Value Pure Cane Sugar @ $1.98) = $0.17
  • 1 cup water = Pretty much free
  • 2 tablespoons sweet red chili sauce (Mae Ploy Sweet Chili Sauce @ $1.96) = $0.22
  • 1/2 teaspoon of salt = Too insignificant to matter
  • 3 tablespoons corn starch (Great Value Cornstarch @ $1.18) = $0.11
  • 2 cups of white rice for the side (Great Value Instant White Rice @ $2.44) = $0.70
This meal serves 4 but let me tell ya, Cole and I ate all that we wanted and we still had a bunch left over (as pictured above). Each serving costs $1.92, which is significantly less than what you would pay for at Panda! It's super filling and freaking delicious! Eat up!
